Healthy French Toast

I love food. I mean I know you guys know that about me by now…but like…I REALLY love food. Especially being pregnant, I swear I have a whole new appreciation for food. When I learned that I didn’t need to eat “diet” food to lose weight and get healthy, I felt SOOO liberated! Now it is my mission to share that with the world!!

You CAN eat food that actually tastes good. This Healthy French Toast recipe is so good!! I honestly couldn’t wait to share because I know my fellow foodies will feel me on this one!!!




2 Large Eggs

2 Tbsp. Unsweetened Almond Milk

2 tsp. Pure Maple Syrup, divided use

1/2 tsp. Ground Cinnamon

2 slices low-sodium Sprouted Whole Grain Bread

1 tsp Extra-Virgin Organic Coconut Oil

1 cup Fresh Sliced Strawberries (I used pineapple on the side)



  1. Combine eggs, almond milk, 1 tsp maple syrup, and cinnamon in a shallow pan; whisk to blend.
  2. Soak each slice of bread in egg mixture for 5 minutes, turning halfway.
  3. Heat oil in medium nonstick skillet over medium heat.
  4. Add bread; cook for 2 to 3 minutes on each side, or until golden brown.
  5. Top each slice evenly with strawberries and remaining 1 tsp maple syrup.
  6. Serve immediately. 



21 Day Fix Approved Pancake Recipe

Ok, let me start by saying this recipe is totally BOMB and perfect whether you are following a Beachbody program or not! Note: Now most Beachbody programs utilize the container system first used in the 21 Day Fix because it’s just so effective! 

Being pregnant, I’m craving hearty filling foods like freaking crazy! And pancakes are just delicious right?! I’ve made “healthy” pancakes in the past that are basically just a banana and an egg and honestly…yeah it’s a “pancake” but it’s not PANCAKES! I don’t want to feel like I’m restricting myself…and trust me, when I used to restrict myself, I was one miserable bitch.

That is why I’m obsessed with this meal plan. No restriction, no calorie counting, no misery…no staring at someone else’s “real” food longingly. 



Serves 7 (2 pancakes each)

  • 1 1/2 all-purpose flour (I used whole wheat flour) 
  • 3 tsp baking powder
  • 1 dash sea salt
  • 1 1/2 unsweetened almond milk (I used vanilla) 
  • 1 large egg
  • 1 tbsp pure maple syrup
  • 5 tbsp grass-fed butter (you can substitute other oil like coconut oil too)
  • 1 tsp pure vanilla extract 
  • Blueberries



  1. Combine flour , baking powder, and salt in a small bowl; mix well. Set aside
  2. Combine almond milk, egg, maple syrup, butter, and extract in a medium bowl; whisk to blend.
  3. Add flour mixture to almond milk mixture; whisk to blend until there are no lumps. 
  4. Heat large nonstick skillet over medium heat.
  5. Pour 1/4 c batter on the skillet; cook for 2-3 minutes, or until bubbles form around the edges of the pancake. Flip, cook for an additional 90 seconds.
  6. Serve 2 pancakes with 1 tbsp blueberry jam.


Blueberry Jam

Take frozen blueberries, add a little water and cook on medium-high heat until the blueberries break down and the mixture thickens. Top pancakes with this. This is also awesome on toast or English muffins.

* I had two servings and didn’t include the blueberry jam! But you do whatever floats your boat!!*

Paleo McGriddles Swap

Can I just throw this out there?…I fucking love breakfast! It is my favorite meal of the day by FAR! It has been such a blessing working from home because I actually get to spend a lot of time in the kitchen experimenting with all sorts of amazing recipes….and I get to wear pjs all day if I want…just saying. Having PCOS (polycystic ovarian syndrome), it’s really important to me that I eat whole ingredients (as in..I can pronounce everything on the label…no chemicals…and if there is only one ingredient on the label…or no label at all…perfect!!). That being said, Im not going to eat boring eggs with veggies every morning…or plain chicken…or boring salad…sensing a trend? I like to eat. REALLY eat!! So I decided to make a Paleo McGriddles Swap!! Why? Because I’ll admit, McGriddles are pretty delicious!! This Paleo McGriddles Swap is freaking BOMB!! And I don’t just say that…TRUST!!

I know it can be easy to fear fat, fear calories, and want to go for lower calorie/low fat options. But those options are often loaded with chemicals…chemicals that can seriously mess with our bodies causing cravings, health issues…I mean it’s really icky. So my “cysters” out there, it might be time to change it up!! I’m telling you a week of eating only whole ingredients and you’ll  feel like a new woman!

Paleo McGriddles Swap
Serves 6
For the Pancakes
  1. 3 eggs, whisked
  2. ½ cup almond milk + 3 tablespoons (carton, unsweetened vanilla)
  3. 1 tablespoon maple syrup
  4. 1 teaspoon vanilla extract
  5. ½ cup almond flour
  6. 1/3 cup coconut flour
  7. 2 tbsp flaxseed meal
  8. ½ teaspoon baking powder
  9. ½ teaspoon baking soda
  10. pinch of sea salt
  11. coconut oil, ghee, or pan drippings from bacon for greasing pan
For the other toppings
  1. 8 eggs, whisked
  2. salt and pepper, to taste
  3. butter or ghee (for garnish, optional)
  4. maple syrup (for garnish, optional)
  5. 6 slices bacon, cooked in a pan (save drippings if you want to use it for pancake or eggs)

  1. Whisk together pancake ingredients: eggs, almond milk, maple syrup and vanilla extract in a large bowl. Then, add almond flour, coconut flour, flaxseed meal, baking powder and baking soda and a pinch of salt to the large bowl and whisk until batter is well combined.
  2. Heat up a griddle pan or whatever pan you prefer and grease. Once hot, use an ice cream scoop or cookie scoop (or big spoon, whatevs) to make pancakes that are about 3 inches across. Let cook through until bubbles begin to appear on the top of the pancakes then flip, about 3-4 minutes per side. Continue until all the batter is gone- the batter should make 12 pancakes. Set pancakes aside and cover with foil to keep warm.
  3. Lastly, turn the heat down on the pan to a medium low heat. Add the whisked eggs along with salt and pepper, then use a silicone spatula to continuously move the eggs while they cook through.
  4. Make the sandwiches: pancake, slice of bacon, an ice cream scoop worth of scrambled eggs, another pancake, then if you want, top each one with a small amount of butter and maple syrup on top.

Banana Apple Muffins

I’ve been trying to make Brian healthy recipes that he will actually eat. Do any of you deal with “relationship weight”? We love each other and I often find we can eat less than healthy when we are together. I honestly thought these banana apple muffins from the Fixate cookbook would be “ok.” Healthy and good but not YUMMY. 

What I love about these banana apple muffins is that they taste totally sinful! Brian loved them!!

With my PCOS, it’s really important that I fuel my body with whole natural ingredients that serve my body. These muffins utilize natural ingredients, they are filling, and they make me feel like I’m not deprived!

Banana Apple Muffins
  1. 2 ripe bananas mashed
  2. 2 large eggs, beaten
  3. 1 1/2 cups almond flour
  4. 3/4 tsp baking soda
  5. Dash of himalayan salt
  6. 3/4 apple chopped
  7. 1 Tbsp organic grass fed butter, melted

  1. Preheat oven 350 degrees
  2. Spray muffin tin with coconut oil cooking spray
  3. Combine eggs, banana, butter (optional) into bowl and mix well
  4. Combine almond flour, baking soda, and salt in a medium bowl, mix well.
  5. Combine both bowls of ingredients together and mix until blended
  6. Add chopped apple and mix
  7. Divide batter evenly into muffin tins (mine made about 10 muffins)
  8. Bake 15-18 minutes or until golden brown
  9. Cool and Enjoy!

Pumpkin Muffins With Maple Cream Cheese

OMG you guys!! I really can’t even. Fall is upon us and as the basic white girl that I am, all I want is pumpkin. Pumpkin on pumpkin. You get the picture. When I saw the recipe for these pumpkin muffins WITH maple cream cheese I knew I just HAD to make them. Like holy shit right?!

I think people are often surprised by how much I actually eat. But I think not cutting corners and actually fueling my body properly (without going overboard) has been so key to my long term success. You guys all know I love my wine, I have it a few nights a week. Kettle cooked potato chips…at least twice a week. And if I can make something scrumptious that I don’t even have to count as a treat or a cheat like these pumpkin muffins? Count me the heck in!! I want to feel satiated and like I still get to indulge!

Having PCOS (polycystic ovarian syndrome) is (excuse my language) a bitch. Before I was really conscious of the ingredients that I was putting into my body, I was constantly bloated and gaining weight no matter what I tried. That’s why I try to focus on whole natural ingredients that are easy on my body. Nothing overly processed (unless it’s my occasional chips, etc. as mentioned. I’m not perfect guys!!). So these pumpkin muffins with maple cream cheese are right up my alley. They taste like they should be bad for you…but they are not! And they are 21 Day Fix container approved (also The Master’s Hammer and Chisel, 22 Minute Hard Corps, Country Heat, etc.). I really do love this container system because I don’t have to count calories or overthink everything (I used to count compulsively).

Pumpkin Muffins With Maple Cream Cheese


2oz Cream Cheese
1 Tbsp. Pure Maple Syrup
1 Large Egg, lightly beaten
1 Cup Canned Pumpkin Puree
1 1/2 cups Almond Flour
3/4 tsp. Baking Soda, Gluten – Free
1 Dash  Sea Salt (or Himalayan Salt )
2 Tbsp. Raw Pumpkin Seeds (optional, I didn’t use them!)


1. Preheat oven to 350* F.
2. Prepare nine muffin cups by lining with muffin tin liners or coating with spray. Set aside.
3. Combine cream cheese and maple syrup in a small bowl; mix well. Set aside.
4. Combine egg and pumpkin in a medium bowl; mix well. Set aside.
5. Combine almond flour, baking soda, and salt in a medium bowl; mix well.
6. Add almond meal mixture to egg mixture, mix until just blended.
7. Spoon batter into each prepared muffin cup, filling a little less than 1/2 full.
8. Spoon about 1 heaping tsp. cream cheese mixture into the centre of each muffin. Evenly fill muffin cups 3/4 full with remaining batter.
9. Sprinkle muffins evenly with pumpkin seeds.
10. Bake 16 to 18 minutes, or until golden brown and toothpick inserted into the centre comes out clean.
11. Transfer muffins to rack; cool & ENJOY!!

The Master’s Hammer and Chisel: Day 3 & A Healthy Salmon and Poached Egg Sandwich Recipe!

And I thought the first two days were hard..yikes. I love this program because it’s pushing me. It’s making me work harder than I have before and it will push me to new levels. I really can’t believe that this is only the first 3 days. By day 60 I’m going to be superwoman!

I’m going to order a pull up bar and a bench so I can use the program to its full extent. You don’t need a bench or a pull up bar, if you have a stability ball and a resistance band, you are fine. You just need light, medium, and heavy weights. I’m getting a full set for my birthday! I’m so excited! I never thought I’d see the day when I asked for WEIGHTS as my birthday present. Hell has frozen over. I asked for the Powerblock Elite Dumbells. I read a ton of reviews before making my decision.

This is going to be a whole new adventure for me. I also ordered energize and hydrate from the Beachbody performance line. Energize isn’t like other preworkouts that make you jittery. I tried a sample of it a few months ago and I really loved it. But honestly, I just really can’t imagine getting crazy results like these!

I’m going to finish this program! And I have my blog and my social media (and therefore all of you) to keep me accountable.

I did the “Iso Chisel” workout today where after each set, you hold the move for 10 seconds. Some of the moves I felt good about..until that dreaded hold. But you know what? Even though it was painful, I could feel that it was working my muscles in ways that I hadn’t before.

I joked that after that workout, I wanted to snuggle up with my teddy bear. It’s hard, but I know it will take me to a whole new level. I think even more than getting program results, I’m proving to myself that I can do something hard, something beyond what I thought possible.

For lunch I decided to have a smoked salmon and poached egg sandwich with lemon garlic sauce, right out of The Master’s Hammer and Chisel meal plan. It looked delicious and simple so I decided to give it a try!

Makes 4 Servings


  • 4 tsp Fresh Lemon Juice, Divided Use
  • 2 cloves Garlic, Finely Chopped
  • 1 tsp. Dijon Mustard (gluten-free)
  • 2 Tbsp low-fat (1%) Greek Yogurt
  • 2 cups Hot Water
  • 4 Large Eggs
  • 2 Sprouted Whole-Grain English Muffins, Cut In Half, Toasted (I used sprouted bread)
  • 16 thin slices Smoked Salmon
  • Fresh Baby Spinach, For Garnish



  1. Combine 3 tsp. lemon juice, garlic, mustard, and yogurt in a small bowl; mix well. Set aside.
  2. Bring water to a boil in a medium saucepan over medium-high heat. Add remaining 1 tsp. lemon juice; reduce heat to maintain a gentle boil.
  3. Place one egg into a small bowl. Hold bowl close to the water’s surface and slip the egg into the water, repeat with remaining eggs; cook for about 3 to 4 minutes, or until whites are completely set. Gently lift eggs out of water.
  4. Spread English muffin halves evenly with lemon garlic sauce; top evenly with spinach, salmon, and egg.

Pumpkin Spice Shakeology!

Pumpkin Spice Shakeology is the BOMB dot com. I’m a typical white girl. There is no denying it. When fall rolls around, I’m SO excited! I love fall fashion, fall dates (pumpkin picking, apple picking, corn mazes, etc.)! After eating way more than I should have this past weekend, I have definitely been hyper focused on my fitness and nutrition this week. My birthday is on December 27th and there is no way that I’m going to let myself spiral out of control!! And it is my golden birthday! I think that’s what they call it…I’ll be 27 on the 27th! So I’m planning on making this coming year my best yet!

I have to say, I did love being home at my parent’s house though. I think spending time with your family and just unplugging for a while is SO important. I feel like my batteries are recharged. My parent’s didn’t enjoy having Chip at their house so much (Chip is my youngest puppy). They had these puppy gates up in their kitchen an no matter what gate they put up, Chip could get over it. My dad was making jokes about Chip being a high jumper and then being able to repel over the other side. It was a total pain in the ass, but we dealt with it for the time being.

I also felt bad for Chip…my niece Andi (almost 6 years old), REFUSED to put him down. She carried my little man EVERYWHERE. He’s cute and small so I get it, but after a while it looked like his eyes were saying, “for the love of god, please put me down child!”

Isn’t she just the cutest? I actually gave her a “strawberry smoothie” when I was at my parent’s house (strawberry Shakeology) and she LOVED it!! My sister has been trying to get her to eat healthier foods, which can be hard with a child. So I felt like the best aunt ever! 70 superfoods and she didn’t have a clue! Aunt win!

This morning I wanted to experiment with my Shakeology recipe. I was in the supermarket and after seeing pumpkin EVERYTHING, I decided I had to try to make a pumpkin spice Shakeology recipe!

  • 1 serving Vanilla Shakeology
  • 1 Medium Banana
  • 1/2 cup Pumpkin Spice Almond Dream
  • 1/2 cup Unsweetened Vanilla Almond Milk
  • 4 Ice Cubes

How To Modify Recipes To Be Healthier

The other day I decided to make Brian pancakes for breakfast. He’s always so good to me, so I wanted to do something sweet. The night before he took me out to an amazing Italian dinner and it was just incredible.

I googled pancake recipes and I found one from my girl Martha Stewart. I don’t often come up with fancy dancy healthy recipes from scratch. I’m not a chef, just a girl trying to make it work!

Healthy Pancakes

Original Ingredients:

  • 1 cup all-purpose flour, (spooned and leveled)
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons unsalted butter, melted, or vegetable oil
  • 1 large egg
  • 1 tablespoon vegetable oil


  • I used whole wheat flour instead of regular flour
  • I used truvia instead of sugar
  • I used unsweetened vanilla almond milk instead of milk
  • I used olive oil instead of butter/vegetable oil


Simple, right?

Brian isn’t necessarily into healthy food. But I worry about him so I try to make him healthier options that don’t taste overtly healthy. He has been amazing about supporting me with coaching and he has been trying to be healthier. I want him to be with me forever!

Anyway, modifying recipes to be healthier and making slight changes in your life to be healthier overall is not hard! I’m not a chef (at all!!!).

Smoothie Bowl!

If you don’t know, I have been dealing with some health issues this month. Random things like low body temperature, freezing extremities, dizziness, breaking out in hives, just weird stuff! My blood work came back today and other than my vitamin D being slightly low, there is nothing noticeable. However, I did a saliva test to test my hormones so I’m hoping that my hormones show something.

Brian has been so supportive! He even took me to go get my blood taken and told me stories so I’d be distracted. He’s the best. I’m trying to give my body quality whole foods right now so that I can try to fight this from the inside out.

This morning I decided to make a smoothie bowl. I always see the pictures of them so I decided to take a crack at it.

Smoothie Bowl



  • 4 large kale or spinach leaves
  • 1 cup chopped frozen mango
  • 1 cup chopped frozen mandarin oranges & pineapple
  • 1 tablespoon shredded coconut
  • 3 Medjool dates, pitted (or use regular dates softened in warm water)
  • 1 cup unsweetened vanilla almond milke
  • 1 serving strawberry Shakeology


Blend until smooth and pour into a bowl. Top with fresh fruit
